Spinach in smoothie a good thing after all

I’m a big fan of smoothies. So much so that I have two cookbooks devoted to nothing but smoothies.

A few years ago I bought a four-pack of cups from Tupperware that feature tight-fitting lids and a hole for a straw. They are perfect for smoothies — filling and storing extras in the freezer.

One thing I’ve never really experimented with and have wanted to for quite some time is putting spinach or greens in smoothies. I think it’s a good idea nutrition-wise, but I never really knew how it would taste.

My fresh strawberries I picked during my vacation gave me just the excuse I needed to give it a try.

After successfully having spinach in a smoothie, I can happily say I am eager to do it again. Not only was the smoothie tasty, but I couldn’t really taste the spinach. Even better yet!

Berry Surprise Smoothie

1 banana

1 apple, cut up (do not peel)

1 cup frozen mixed berries (I used fresh strawberries instead)

1 cup fresh spinach

¼ cup orange juice

1-3 ice cubes

2 tablespoons plain or Greek yogurt (I used a small container of Greek yogurt)

Directions:

» Place all ingredients in the blender and blend on highest setting for at least 1-2 minutes.
